Cooking With Coconut Oil
From the minute I opened the cookbook I was impressed with the photos. Everything looked so amazing and appetizing, I really didn’t know where to start!!
I love how each recipe has ingredients that: A – I actually KNOW what they are! and B – Most are very easy to find at your local grocer or farmers market!
I also love that most recipes are flexible. She gives variations of her own recipes and ideas on how to change them up a bit. So you really never grow tired of her food! In fact, Elizabeth has “fed me” quite a bit the past few weeks!
Every morning prior to my trip to the gym, I’ve been having one of her Chocolate, Fruit, and Nut Energy Bites.
And upon returning from the gym, I’ve been partaking in her Sweet Potato Cups with Baked Eggs:
I love these because I prep them in advance!! I’ll shred several days worth of the sweet potato and bake the “crust” on Sunday. Then when I’m home from the gym, all I have to do is crack an egg, add some salt & pepper, and throw it in the toaster over to cook the egg while I chat with the hubs and Kelly. Before I know it breakfast is served!
My family and I absolutely LOVED the Crispy Almond Chicken as well..
And of course I can’t wait to dive in to the dessert section! Between the Chocolate Brownie Caramel Cups and the Chocolate-Coconut Protein Cookie Balls……….the only problem I have is deciding which to make first. 🙂
