Ingredients
Tart Dough
  • 1 cup all-purpose flour sometimes I use half whole wheat or add a tablespoon or two of ground flax seed just to feel virtuous
  • 1 tablespoon sugar I prefer coconut sugar
  • 1/2 stick unsalted butter
  • 3 tablespoons ice-cold water
Gluten-free Dough
  • 1 cup almond flour blanched
  • 1/2 cup tapioca starch
  • 1 tbsp coconut sugar
  • 1/4 tsp salt
  • 1/2 stick butter cold and chopped into small pieces, 1 stick
  • 3 tablespoons ice-cold water about 3 tablespoons,but varies with the brand of almond flour
Filling
  • 2-3 of your favorite organic apples – avoid apples that are too sweet
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • Sugar for crust

Instructions
  1. Preheat oven to 400 degrees.
  2. Place the flour, sugar, and butter in the bowl of a food processor and process for about 5 seconds. Add the water and process for about 10 seconds, until the dough looks like cornmeal. If it forms a ball you might have processed it too long. But go ahead and make the tart anyway. Pour the crumbly mixture out onto a plate covered in plastic wrap. Form the dough into a ball flatten and cover with plastic wrap. Refrigerate the dough while you prepare the apples. You can also make it days in advance and keep dough well wrapped in freezer.
  3. Peel, halve and core the apples. Arrange them, cut side down, on a cutting board and cut them crosswise into ¼ inch slices. Set aside the larger center slices, and chop the end slices and any broken slices coarsely.
  4. On a lightly floured surface, roll the dough to create a 10 inch circle. Transfer the dough circle to a greased cookie sheet.
  5. Arrange the chopped apples on the dough, spreading them out to within 1 inch of the edge. Arrange the apple slices , positioning them to imitate the petals of a flower. Sprinkle cinnamon over the apples. Drizzle honey on top.
  6. Fold the edge of the pastry over the apples to create a border. Extra special touch: brush top of pastry with milk and sprinkle sugar on top. This creates a lovely sugary crunchy crust and makes the tart look ooooh sooo professional.
  7. Bake for approximately 30-40 minutes or until the pastry is brown and crisp and the apples are tender. My two ovens vary greatly, so do check in on the tart after 20 minutes you might have to turn it around.

Serve lukewarm or at room temperature.

Gluten-free crepes recipe
French-style, gluten-free crêpes are actually very easy to make. You just need a couple of easy to get ingredients. They can be served as sweet or savory.

  • 1 cup All Purpose Gluten Free Flour
  • 1/4 cup coconut milk, soy milk or almond milk
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp sugar
  • 2 tbsp butter
Filling:
  • 8 oz cream cheese
  • 8 oz sour cream
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 4 cups blueberries
  • 2/3 cup sugar
  • 1 1/3 cup water
  • 2 tsp cornstarch
  • whipped cream

  • 8 oz sour cream
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 4 cups blueberries
  • 2/3 cup sugar
  • 1 1/3 cup water
  • 2 tsp cornstarch
  • whipped cream
Instructions
  1. Melt butter in a skillet over medium heat make sure pan is coated with butter to keep crepes from sticking to the pan.
  2. Add remaining ingredients into a bowl, mix on low until smooth.
  3. Add 1/3 cup of batter to pan swirl pan to coat the bottom of skillet with batter. Cook for 1 minute.
  4. Use a thin spatula or butter knife to loosen edges of crepe to flip over cook for 1 minute just until golden brown.
  5. Top with whipped cream
  6. For Filling: Blend all ingredients until smooth except use half of blueberries reserve the other half for topping the crepes.
  7. To assemble: Spoon filling in center crepe then fold crepe in half and roll.

Gluten-Free Sushi Recipe
After all the research about the gluten-free sushi, I decided to give the sushi-making a go. I used some leftover rice from the fridge. Though it was not perfect, the result was tasty and safe. It is just an easy way to have a gluten free sushi experience. Read on to find out how to make sushi at home.

  • Bamboo rolling mat
  • 8 pcs Nori sheets
  • 2 cups Sushi rice
  • 1 Avocado, mango and cucumber
  • 1/4 cup Daikon sprouts and scallions
  • 2 oz Cooked or fresh sushi-grade fish: salmon (sake) or tuna (maguro)
  • Gluten-free Tamari soy sauce
  • White and black sesame seeds to season the rice
  • Gluten-free teriyaki
  • Ginger and wasabi

Instructions
  1. Prepare sushi filling and place in equal-sized strips for a quick and easy assemble.
  2. Take out the nori seaweed from the package and place it shiny side down on a bamboo mat.
  3. Place a thin layer of rice on the nori sheet. Leave roughly one-inch gap on the edge of the nori on one side.
  4. Layer the sushi fillings about one inch from the border that is facing you.
  5. Use the bamboo mat to help keep the rice and ingredients in one piece. Carefully bring the edge of the roll over the filings.
  6. With one hand, push the sheet in as tight as you can. Continue to roll the sushi using the mat.
  7. Once you finish, give the roll a moderate squeeze just enough to ensure that it will keep the shape.
  8. Unroll the bamboo mat and place the finished roll onto a dry cutting board.
  9. Using a sharp knife, cut the roll first in two halves. Then cut those two more times into the 8 pieces.
  10. Enjoy your gluten free sushi!
Recipe Notes

It is OK to use ordinary rice.
