  • 6 Egg yolks
  • 2 Cups of shredded coconut. Ensure it is unsweetened!
  • 1 Vanilla bean.
  • 1/4 cup honey

Instructions
  1. Soak the almonds till they are soft. This may take all night long so prepare upfront. Make certain they are rinsed thoroughly prior to the soaking. Mix the soaked almonds in the blender with drinking water. Go for a good smooth mix. Tip: Use a super-fine strainer to get rid of the almond pulp from your combined mix.
  2. Boil your pot and put about 2 cups in the coconut.
  3. Mix a combination for approximately five minutes on high speed. Everything has to be extremely smooth. Again, strain the coconut pulp to get rid of any solid pieces.
  4. Have a cooking pot set on the stove warmed to a medium temperature, add all almond and coconut mix and blend.
  5. Open up the vanilla bean and add it to the pot. Separate the egg yolks and put these in the mix.
  6. Stir the mix regularly and regulate the temperature to ensure that its just under simmering.
  7. This is really important! Ensure the mix never simmers. It will curdle several of the ingredients. Keep mixing up till the desired consistency is reached. A great way to judge is to see if the custard sticks to the backside of a wood made spoon, and if it has a consistency such as that of cream.
  8. Take away the mix from the stove and allow it to cool off. It must be able to cool to room temp. Remove the vanilla bean and get rid of the seed from your pod, put the seed back in the mix. Put the honey in and mix it in entirely.
  9. Place the mix in the refrigerator, and when it's cooled off enough, you may deep freeze it.
  10. Ready! You have just made your Paleo Dessert.

Tart Dough
  • 1 cup all-purpose flour sometimes I use half whole wheat or add a tablespoon or two of ground flax seed just to feel virtuous
  • 1 tablespoon sugar I prefer coconut sugar
  • 1/2 stick unsalted butter
  • 3 tablespoons ice-cold water
Gluten-free Dough
  • 1 cup almond flour blanched
  • 1/2 cup tapioca starch
  • 1 tbsp coconut sugar
  • 1/4 tsp salt
  • 1/2 stick butter cold and chopped into small pieces, 1 stick
  • 3 tablespoons ice-cold water about 3 tablespoons,but varies with the brand of almond flour
Filling
  • 2-3 of your favorite organic apples – avoid apples that are too sweet
  • 1 tablespoon honey
  • 1 teaspoon ground cinnamon
  • Sugar for crust

Instructions
  1. Preheat oven to 400 degrees.
  2. Place the flour, sugar, and butter in the bowl of a food processor and process for about 5 seconds. Add the water and process for about 10 seconds, until the dough looks like cornmeal. If it forms a ball you might have processed it too long. But go ahead and make the tart anyway. Pour the crumbly mixture out onto a plate covered in plastic wrap. Form the dough into a ball flatten and cover with plastic wrap. Refrigerate the dough while you prepare the apples. You can also make it days in advance and keep dough well wrapped in freezer.
  3. Peel, halve and core the apples. Arrange them, cut side down, on a cutting board and cut them crosswise into ¼ inch slices. Set aside the larger center slices, and chop the end slices and any broken slices coarsely.
  4. On a lightly floured surface, roll the dough to create a 10 inch circle. Transfer the dough circle to a greased cookie sheet.
  5. Arrange the chopped apples on the dough, spreading them out to within 1 inch of the edge. Arrange the apple slices , positioning them to imitate the petals of a flower. Sprinkle cinnamon over the apples. Drizzle honey on top.
  6. Fold the edge of the pastry over the apples to create a border. Extra special touch: brush top of pastry with milk and sprinkle sugar on top. This creates a lovely sugary crunchy crust and makes the tart look ooooh sooo professional.
  7. Bake for approximately 30-40 minutes or until the pastry is brown and crisp and the apples are tender. My two ovens vary greatly, so do check in on the tart after 20 minutes you might have to turn it around.

Serve lukewarm or at room temperature.

  • 6 pieces of dark chocolate
  • 1 teaspoon of vanilla essence
  • 1 teaspoon honey
  • 1 teaspoon coconut oil

  • 1/4 cup coconut
  • 6 pieces of dark chocolate

  • 1 teaspoon honey
  • 1 teaspoon coconut oil

Instructions
  1. Soak the dates in boiling water for 15 minutes. Drain well and set aside.
  2. Blend the almonds in a blender until they are cut up into small pieces. Add the remaining ingredients, including the dates. Pulse the ingredients until combined. You may need to stop the blender and push the ingredients down from the sides with a spatula.
  3. Squeeze a spoonful of ingredients together in your hand and push firmly into a ball shape. You can either roll these in coconut or leave as is.
  4. Store in the fridge and enjoy for a delicious, tasty snack.
Recipe Notes

You can add one spoon of almond flour to the mix if you need it a little dryer.
