This morning one of my readers requested the recipe for the waffle I posted earlier today. Ask and you shall receive my friends!

Pumpkin Protein Waffle

Prep Time: 15 min

Cook Time: 5 min

Ingredients (serves 1)

  • 1/2 c. quick oats
  • 3/4c. egg whites
  • 1 tbsp. pumpkin puree
  • 1 tsp. vanilla
  • pumpkin pie spice (to your taste preference)


  1. Place all ingredients in a bowl and stir until well combined.
  2. Let mixture sit for approximately 10-15 minutes or until the oats have soaked up a bit of the wet ingredients and the mixture is slightly thicker
  3. Cook in either a waffle maker or in a skillet like a pancake.
